Pork Tenderloin and Garden Salad

After a very stressful week, tonight I needed to keep the S in simple.  So, I consulted my freezer which held a yummy little peppercorn marinated pork tenderloin.

Peppercorn Pork Tenderloin

Here’s the Step By Step:

1. Slide up 2 to 3 small onions (or 1 large onion) into a large slices. Layer them into the bottom of glass baking dish.

2. Preheat the oven to 425.

3. Open the pork package and lay the tenderloin on top of the onions.

4. Bake for 30 minutes or until juices run clear.

My pantry is a little bare this week so I opted for a simple garden salad on the side. Chop up some romaine lettuce, carrots and cucumbers. You can substitute for anything you have on hand. It’s a great excuse for cleaning out the veggie drawer.

      Thank you Iva! It was really good, and super simple too. Look for pre-marinated pork tenderloins in the meat section of the grocery store. So far I have tried peppercorn (featured), Asian and apple burbon.
