Citrus Marinated Pork…who knew?

So tonight I once again found myself with a fairly empty fridge and a hungry tummy. I pulled out another pork tenderloin from the freezer. This one was teryaki and while good on it’s own, I was feeling like dressing it up a bit. I started racking my brain for flavors that would compliment the teryaki pork and came up with…

Yep…Oranges. I decide a dry rub would preserve the teryaki flavor while adding another layer of seasoning.

Orange Spice Rub

Combine the zest of two oranges, a few shakes of Chicago Steak Seasoning and about a teaspoon of garlic salt.

Generously rub the spices all over the entire pork loin.

Place in a glass baking dish and bake on 425 for about a half hour.

Easy Risotto

I super love risotto, but I am definitely low on time and patience most of the time. Imagine my surprise when I found boxed risotto options in the health food aisle of the supermarket. I checked the packaging and was even more excited to discover that all the package contained was the Arborio rice, herbs, spices and dehydrated cheese. There was no added sodium, preservatives or yucky stuff.  Tonight I grabbed a box of herb risotto to compliment the pork.

All you need to do is saute the risotto in a bit of olive oil (or substitute canola oil in a pinch). Add in about 2 1/2 cups of water and the seasoning packet.  Bring it to a boil, drop the heat and simmer for 20 minutes. Everything should finish up about the same time.  YUM YUM YUM
